GB 35848-2024 Commercial gas-burning appliance
1 Scope
This document specifies the classification and models, requirements, test methods, inspection rules, marking, warning and instructions as well as packaging, transportation and storage of commercial gas-burning appliance (hereinafter referred to as “appliance”).
This document is applicable to appliances that use town gas conforming to GB/T 13611, with the combustion air taken from indoors and the combustion products directly or indirectly discharged to outdoors, including:
a) steam generator type appliance with nominal heat input of not greater than 80kW, steam pressure of not greater than 80kPa, and the design water capacity at normal water level of less than 30L;
b) steaming oven type appliance with nominal heat input of not greater than 80kW and steam pressure in steaming chamber of not greater than 1 200Pa;
c) fryer type appliance with nominal heat input of not greater than 50kW and pressure in chamber of not greater than 80kPa;
d) pasta cooker type appliance with nominal heat input of not greater than 50kW;
e) large cooker type appliance with nominal heat input of not greater than 80kW;
f) Flat head cooker type appliance with nominal heat input of not greater than 50kW;
g) atmospheric pressure boiler type appliance with nominal heat input of not greater than 100kW;
h) rice cooker type appliance with cooking volume of greater than or equal to 6L;
i) dishwasher type appliance with nominal heat input of not greater than 50kW;
j) cooking stove type appliance with nominal heat input of not greater than 60kW;
k) barbecue type appliance with nominal heat input of not greater than 50kW;
l) hot plate type appliance with nominal heat input of not greater than 35kW;
m) oven type appliance with nominal heat input of not greater than 80kW;
n) other commercial gas-burning appliances with nominal heat input of not greater than 100kW;
o) combination of the above products.
Note 1: The above heat input refers to the heat input of a single combustion unit.
Note 2: This document only deals with single-phase power supply with rated voltage not exceeding 250V.
Note 3: Any pressure not specified in this document refers to gauge pressure.

3 Terms and definitions
For the purposes of this document, the terms and definitions given in GB/T 13611, GB/T 16411, GB/T 38603 and the following apply.
3.1
cold state
state where the burner of the appliance is cooled close to room temperature after the appliance has operated normally for a period
3.2
spark restoration
a function that automatically turns the ignition on again without completely cutting off the gas supply when ignition is unsuccessful or the flame is accidentally extinguished
3.3
recycling
automatic control function of cutting off the gas supply immediately and restarting automatically according to the starting program in case of unexpected flame failure of the appliance during operation
3.4
primary flue
a section of continuous flue on the appliance structure
Note: It may be directly connected with the flue of the external smoke exhaust system to exhaust smoke, and may also exhaust smoke through the centralized smoke exhaust system.

ignition burner
permanent ignition burner used to ignite the main burner
Note: Ignition burner which is maintained ignited when the main burner is ignited or extinguished, and also known as constant open flames.
3.6
condensation type gas appliance
appliance of which the water vapor in the smoke generated by gas combustion is partially condensed with the heat effectively utilized during condensation under the reference conditions
3.7
gas steaming oven
appliance that uses gas as fuel and uses micro-pressure saturated steam made by heating water for food steaming
Note 1: The product is mainly consisting of components such as combustion system, water supply system, water tank or steam generation system, smoke exhaust system, and steaming chamber.
Note 2: The product is divided into water tank gas steaming oven and steam generating gas steaming oven.
— water tank gas steaming oven refers to a oven with water tank. The water in the water tank is heated to boiling in an open manner and provides steam for the steaming chamber of the steaming oven, the steam is directly discharged into the atmosphere through the steaming chamber or vent pipe.
— Steam generating gas steaming oven means a steaming oven containing a steam generating unit in the form of a steam generator structure. The steam passage is not equipped with a pressure accumulator valve, which is different from the combination of steam generator and steam chamber with pressure function.

Note: A fryer for frying food under pressure is called a pressure fryer.

the highest (lowest) level indicated on the appliance

appliance for cooking food using gas as fuel and water as medium
4 Classification and model
4.1 Classification
4.1.1 According to the types of gas used, the appliances may be classified into: artificial gas appliance (coded as R, rated pressure 1 000 Pa); natural gas appliance (coded as T, rated pressure 1 000 Pa or 2 000 Pa); liquefied petroleum gas appliance (coded as Y, rated pressure 2 800 Pa or 5 000 Pa).
4.1.2 According to the different smoke exhaust modes, the appliances are classified according to Table 1.
4.1.3 According to different combustion modes, the appliances may be classified into: full premixed appliance, atmospheric appliance and diffusion appliance.
4.1.4 According to whether the latent heat of water vapor in the smoke is utilized or not, the appliances are classified into condensation type gas appliance and non-condensation type gas appliance.
