1 Scope
This standard specifies conditions and detailed analysis procedures for the determination of total fat, saturated fat and unsaturated fat in foods by hydrolytic extraction-gas chromatography.
This standard is applicable to the determination of total fat, saturated fat and unsaturated fat in foods.
The detection limit of this standard is 0.1%.

3 Terms and Definitions
For the purpose of this standard, the following terms and definitions apply.

Total fat
Calculated by the sum of individual fatty acid triglyceride.
3.2
Saturated fat (acid)
Calculated by the sum of all fatty acids free of double bonds.
3.3
Monounsaturated fat (acid)
Calculated by the sum of all fatty acids contain one double bonds (include cis configuration only).
3.4
Polyunstaturated fat (acid)
Calculated by the sum of all fatty acids contain two or more double bonds (include cis configuration only).
